Eggplant Fatteh with Pomegranate Recipe
This article discusses how to prepare Eggplant Fatteh with Pomegranate, an unconventional dish that combines the smoky flavor of grilled eggplant, seasoned meat, and a tahini sauce infused with pomegranate molasses. The preparation steps include salting and peppering the eggplant with sumac, then grilling it until it develops an appealing color. Next, sauté the onions and meat, seasoning them with garlic, onions, and spices, and adding pomegranate molasses to balance the flavors. The tahini sauce is made by mixing tahini with lemon juice, garlic, and yogurt. Additionally, the Palestinian flatbread is toasted until crispy. The dish is assembled in layers of bread, eggplant, and the meat mixture, then garnished with toasted pine nuts, pomegranate seeds, and fresh parsley. It is served fresh to enjoy its crispy texture and rich, well-balanced flavor.
