The article discusses the development of the olive oil industry in Tunisia, focusing on the efforts of independent producers such as Sarah Ben Ramadan and her brand "KAÏA" to enhance the quality and reputation of Tunisian olive oil on a global scale. Although Tunisia is considered the second-largest producer of olive oil worldwide, most of its production is exported as bulk oils to Europe and the United States, where it is blended with other oils without indicating the origin. "KAÏA" aims to distinguish Tunisian olive oil by offering high-quality organic products that carry the name of Tunisia through clear branding and recognized certifications, thereby improving the product's image abroad. The Tunisian olive oil industry faces challenges related to lingering colonial legacies, high production costs, limited financing, and harsh working conditions, especially for women in the sector. Ultimately, the efforts of independent producers are centered on creating a new image for Tunisian olive oil that highlights its superior quality and helps it compete in the global market, amid growing demand for high-quality olive oil in Asian and Latin American markets.
