Unseen Waste Behind Candy Facades
The article addresses the issue of waste in the Arabic confectionery industry, particularly in Lebanon, where the waste rate can reach between 3% and 7% of total production. It explains that waste is not limited to unsold products at the end of the day but begins from the purchasing phase of raw materials, passing through storage, production, and display. Internal data reveal that improving operational practices and reducing overproduction—by analyzing sales and directing production more accurately—can significantly decrease waste. The article offers seven practical recommendations to reduce waste, including measuring waste daily, improving demand forecasting, adjusting preparation quantities, enhancing food safety, monitoring storage conditions, and effectively managing inventory turnover. It also emphasizes the importance of documenting causes of waste and reducing excess while maintaining product safety. Reducing waste conserves water, energy, and financial resources. Lebanon needs specific studies and data to assess the scale and impact of this problem.
